Kesar Phirni Recipe: Quick Answer

For this kesar phirni recipe, grind ¼ cup soaked basmati rice to a coarse paste and stir it into 1 litre of simmering full-cream doodh. Cook 15–20 minutes until thick, then add ½ cup sugar, 12–15 threads of soaked kesar and elaichi. Set in shikoras and chill for 2 hours.

  • Serves 4
  • Keep stirring so the milk does not catch at the bottom
  • Top with badam-pista just before serving

Method

The secret of a good kesar phirni recipe is low heat and patience.

  • Grind: drain the rice and grind it to a coarse paste with a little water
  • Cook: boil the milk, lower the heat and stir in the rice paste. Cook 15–20 minutes, stirring often, until thick
  • Flavour: add sugar, the soaked kesar with its milk and elaichi. Cook 3–4 more minutes
  • Set: pour into shikoras or small bowls
  • Chill: refrigerate for 2 hours, then top with badam-pista and rose petals

Phirni is a must for me at Diwali, and at Eid friends often bring it home.

How kesar lifts phirni

Without kesar, phirni is plain and white. With it, you get a soft golden colour and a warm, floral aroma that says “festival”.

  • Add kesar near the end so the aroma stays fresh
  • Save 2–3 soaked threads to place on top for colour

Tips for the best result

  • Use a heavy-bottomed pan to avoid burning
  • Phirni thickens as it cools. Take it off the heat when it coats the back of a spoon
  • Soak shikoras in water for an hour first so they do not soak up the phirni
  • A few drops of rose water make it extra special for Eid and Diwali

When to make it

Phirni is a classic for Eid, Diwali, weddings and big family dinners. It is easy to make a day ahead.

  • Make it the night before and keep it chilled
  • It keeps well in the fridge for 1–2 days

Which kesar to use

Mongra gives the deepest golden colour with fewer threads. Lacha works too, just add 2–3 more threads.

Kesar Phirni Recipe FAQs

What is the difference between kheer and phirni?

Kheer uses whole rice cooked in milk. Phirni uses coarsely ground rice and is set and served chilled.

How much kesar goes into phirni?

About 12–15 threads for 1 litre of milk (4 servings).

Why is phirni served in shikoras?

Mitti shikoras soak up a little moisture, help it set and add a light earthy flavour.

Can I make phirni a day ahead?

Yes. It keeps well in the fridge for 1–2 days.

Can I use jaggery instead of sugar?

Yes, but add it after switching off the heat so the milk does not curdle.

For phirni, I always use real Kashmiri kesar. It grows on the karewas of Pampore, and before buying I run through my Kashmiri saffron buying checklist.
