Ingredients
Use whole spices, not powders, for a clear golden kahwa.
- 2 cups water
- 1 tsp Kashmiri green tea leaves (or any good green tea)
- 4–5 threads kesar
- 2 elaichi, lightly crushed
- 1 small dalchini stick (about 1 inch)
- 2 laung (optional)
- 6 badam, thinly sliced
- Honey or sugar, to taste

Method
The one rule in this Kashmiri kahwa recipe: spices boil, tea leaves do not.
- Boil the spices: water, elaichi, dalchini and laung for 3–4 minutes
- Add the kesar: drop the threads straight in and simmer 1 minute so the colour starts to release
- Steep the tea: switch off the heat, add the leaves, cover and steep 2 minutes
- Strain: into cups through a fine strainer
- Finish: add sliced badam, and honey once it cools slightly
We make kahwa only in winter. A hot cup on a cold evening is the best part of the season.
How kesar lifts kahwa
Kesar turns kahwa a clear golden colour and adds a soft, honey-like aroma that balances the spices.
- 4–5 threads are enough for 2 cups
- Crush the threads lightly before adding them for more colour
Tips for the best result
- Boiling the leaves makes kahwa bitter, so always steep off the heat
- In Kashmir, kahwa is made in a brass samovar. A pan works fine at home
- Add honey only after the kahwa cools a little
When to serve it
Kahwa is served to guests, after heavy meals and on cold winter mornings and evenings.
- A light finish after a wedding feast or Diwali dinner
- A warm welcome drink for winter guests

Which kesar to use
Lacha gives good colour at a better price for everyday kahwa. Use Mongra when guests are coming.
